Founder Paul Mrocka didn’t set out to build a 25,000-square-foot brewery. He set out to make good beer.
While serving as an Army pilot in Germany, Mrocka developed a deep appreciation for traditional European brewing. Back home, that passion followed him to the shores of Paradox Lake, where he began brewing for friends, neighbors, and eventually—if Adirondack lore is to be believed—anyone willing to arrive by boat.
They called it “lake beer.” And they kept coming back for more.
