Timber & Thyme Brings A Fresh Appetite to North Creek’s Ski Bowl

A ski hill makes a persuasive dinner backdrop, especially when the table holds parmesan truffle fries and a sandwich that requires your full attention.

At Timber and Thyme in North Creek, NY, the North Creek Ski Bowl supplies the scenery, while the kitchen gives food-minded visitors another reason to explore this corner of the Adirondacks.

Located inside North Creek Ski Bowl’s The Station, the restaurant belongs on the radar of anyone scouting North Creek, NY, restaurants beyond the usual downtown stops.

ADK Taste’s visit covered a lot of ground: hush kitties (a delightful variant on hush puppies); McIntyre Mac, an upscale mac and cheese; a Southern fried chicken sandwich; a tasty shaved steak gyro; and the Big Bear Philly, paired with handcrafted cocktails, wine, and non-alcoholic beer. Research can be demanding.

Comfort food with a little ambition.

Timber & Thyme describes its approach as familiar comfort food shaped by thoughtful technique, with local ingredients used whenever possible. That last qualification matters: it signals an intention rather than a claim that every ingredient comes from a neighboring farm.

The restaurant’s appeal lies in recognizable dishes given enough personality to hold your interest. This is food for a table where someone wants fried chicken, someone wants steak, and someone has already started negotiating access to the fries.

Those parmesan truffle fries make an excellent opening move. Listed on the menu as a truffle Parmesan version of Foxlair Frites, they combine truffle oil, American grana cheese, and house garlic aioli. Earthy aroma, salty cheese, and garlic give an ordinary side considerably more presence.

ADK Taste also enjoyed the hush kitties—yes, kitties—and McIntyre mac. Both deserve a mention among the visit’s pleasures, although neither appears on the summer menu currently linked from the restaurant website.

Consider them dishes to ask about, rather than promises to build an entire trip around.

Sandwiches that justify the stop.

The CBR Southern Fried Chicken Sando makes its intentions clear. The menu pairs a battered, fried chicken thigh with black pepper bacon, buttermilk ranch, lettuce, tomato, and onion on toasted brioche. Crunch, richness, and the familiar chicken-bacon-ranch combination give this sandwich plenty of appeal without requiring a culinary glossary.

The steak gyro takes a different route. The published version uses shaved steak with vegetables, feta, pickled onion, and house aioli on toasted naan. Its mix of savory meat, tangy cheese, and fresh accompaniments offers a welcome change of pace alongside the richer sandwiches.

Then comes the Big Bear Philly: shaved steak, seasoned with the house dry rub, joins peppers, mushrooms, onions, American cheese, pickled red onions, and aioli in a toasted hoagie. It is a substantial argument for arriving hungry. The pickled onion adds a sharp counterpoint to the meat and melted cheese.

All three landed well with ADK Taste’s party. Together, they illustrate the restaurant’s strongest proposition: familiar food with enough variation to make choosing interesting—and sharing strategically useful.

A mountain setting with its own identity.

The Station stands where the historical Ski Bowl Lodge once stood. The new 18,000-square-foot lodge brings indoor gathering space, a scenic deck and patio, and a full-service restaurant and bar to this part of North Creek.

For diners, the view of the slopes gives the meal a setting that feels connected to the town’s mountain life. The landscape supplies the sense of place; the menu supplies the excuse to stay awhile.

It also helps to know exactly where you are going.

The North Creek Ski Bowl is a separate arrival point from Gore Mountain’s main base area. Enter Timber and Thyme’s address—50 Ski Bowl Road, North Creek—into your navigation, rather than relying on a general search for Gore.

ADK Taste recommendations.

When to go: Choose a daylight meal if seeing the slopes is part of the appeal.

Check the restaurant’s website or call before leaving; its posted hours are labeled summer, so don't treat them as a confirmed fall or winter schedule.

What to order: Start with the parmesan truffle fries, then choose the CBR for fried chicken, the Big Bear Philly for a hearty steak sandwich, or the steak gyro for a different flavor balance. Ask whether the hush kitties and McIntyre mac are available. And don’t forget to check the daily specials menu.

Plan your arrival: Seating is first come, first served; the restaurant does not accept reservations. Larger parties should call on the day they plan to dine at 518-746-0670.

Make an afternoon of it: Pair the meal with time exploring North Creek, or make it the reward after an outdoor outing. Cocktails, wine, and non-alcoholic beer accompanied ADK Taste’s visit. Drink responsibly, and plan the drive home before ordering.

ADK Taste perspective.

Timber & Thyme gives North Creek another reason to linger. Its combination of an unmistakably mountain setting and an approachable, satisfying meal makes it worth considering as a destination in its own right.

That is a welcome Adirondack discovery: a place where the day’s plans can revolve around lunch, where the sandwiches invite debate, and where ordering fries for the table remains an excellent act of diplomacy.
