The Restaurant at the Bond 1786 in Warrensburg

As far as we can remember, there has always been an interesting and delightful inn and restaurant at 3 Hudson Street, the crossroads of Warrensburg.
Since 1815, the buildings and grounds have gone through many iterations and transformations. Allegedly, it was the site of the first in-ground pool in New York State.
When our parents first started bringing us to the ADKs in the ‘80s (we were mere babes), the restaurant was known as the Merrill Magee House, which the Carrington Family would run for 20-odd years. After that, it changed hands several times. Today, The Bond is owned by Ash Anand, who is building an empire of hospitality businesses in the area. We are not complaining.
Mr. Anand is also the owner of another one of our favorite long-time establishments in Warrensburg, The Grist Mill, which was the heartbreaking victim of a fire in 2020. You have to give Mr. Anand credit; he opened the Bond mid-pandemic and transferred the Grist Mill staff there. Still, it couldn’t have been easy.
Guests at The Bond have a choice of dining in the Tavern, featuring appetizers and classic Pub fare, or the Dining Room. On a recent visit to the Dining Room in March of 2022, we were delighted by the service and food. The starters – roasted Brussel sprouts in a sweet Thai chili sauce with crispy pork belly, tempura artichoke hearts, and baby kale salad – were excellent.
The entrees did not disappoint. Papa Bear gobbled his braised short ribs, Mama Bear enjoyed the salmon, and Baby Bear dug the venison. We also enjoyed delightful cocktails, the brief but adequate wine list, and a knock-out chocolate cake for dessert.
It’s great to have another fine dining option in the area and we look forward to our next visit to The Bond.
